Ginger, garlic and other spices not only add flavor to food, but can ease inflammation, lower cholesterol and improve digestion. Read on for daily doses, recipes and seasoning secrets…

In cultures around the globe, tree bark, shrubs, seeds and bulbs have been used as food enhancers for centuries. Sound unappetizing? You’ve used them too, as cinnamon (made from tree bark), rosemary (shrub), mustard (seed) and garlic (bulb).

These plants and their products not only heighten flavor, but also play a significant role in our overall health. In fact, 80% of all people use plants as medicine to treat everything from digestive distress and fever to muscle pain and asthma, according to the World Health Organization.

In the U.S., we do the same, but less directly. Ever taken an aspirin? To relieve pain, the famed Greek doctor Hippocrates prescribed willow-tree bark and leaves because of their active ingredient salicin, a chemical precursor to aspirin.

These days, we only have to look as far as the kitchen to find herbs and spices containing antioxidants and other phytochemicals to boost our health.

“A pill is boring,” says Beth Reardon, M.S., R.D., an integrative nutritionist at Duke Integrative Medicine in Durham, N.C.

“By including more plant foods, like spices, in your diet every day, you can improve your health. They have a cumulative effect.”

Turmeric
Spice source:
Often called Indian saffron, this spice is known for its golden-yellow color. It’s often found in curry powder and many types of mustards.The shrub that produces turmeric is part of the ginger family and grows widely in India and other parts of Asia.

Reason to season: Instead of popping an ibuprofen (Advil) next time you have joint pain, sprinkle powdered turmeric into your stew or soup.

Its active ingredient is curcumin, which provides the spice’s yellow color and may help decrease symptoms of arthritis, tendonitis and other inflammatory conditions.

“Some studies show that the anti-inflammatory properties of turmeric are just as good as conventional NSAIDs [nonsteroidal anti-inflammatory drugs like Advil], without the side effects of gastric distress,” says Elina Kaminsky, R.Ph., C.N.C., a pharmacist and nutrition consultant at Weill Cornell Medical College in New York City.

Daily dose: 1/2 teaspoon may be enough to alleviate some joint inflammation, says Reardon.

Kitchen tip: Turmeric has a musky, ginger-like taste. It’s delicious when paired with savory dishes such as lentils, steamed vegetables and scrambled eggs. Try it in this Moroccan Vegetable Soup.

GingerSpice source: The tough, bumpy underground stem of the ginger plant has been used for its flavor, scent and therapeutic properties in Asian cultures for centuries.

Reason to season: Dried or fresh, ginger is a powerful remedy for stomach ailments.

“It can [prevent] nausea and gastrointestinal upset resulting from pregnancy, chemotherapy and motion sickness,” Reardon says.Also, some studies suggest ginger can relieve inflammation and reduce joint and muscle pain from rheumatoid arthritis and osteoarthritis, according to the American Academy of Family Physicians.

Daily dose: 1/4-inch slice fresh ginger; 1/3 teaspoon powdered. On store shelves, you’ll also find it candied and pickled, but fresh ginger is best, says Reardon.

Kitchen tip: The juicy root has a tingly, pungent sweetness that adds a peppery warmth to fruits, rice, meats such as poultry or ham, marinades and chutneys, and salads.

For a soothing tea, slice or grate fresh ginger and add to boiling water sweetened with honey. (Store in the fridge.)

Try it in this Edamame-Ginger Dip.

GarlicSpice source: Often called the stinking rose, garlic is an edible bulb from the lily family.

Reason to season: Chopping or crushing raw garlic releases its active medicinal component, allicin, which can help lower cholesterol and blood pressure and slow development of atherosclerosis (artery hardening).

“Garlic can also act as a mild blood thinner and prevent blood clots,” Reardon says.

Consuming garlic might also decrease the risk of stomach and colorectal cancers by inhibiting tumor growth, according to the National Cancer Institute.

Daily dose: One raw clove. Although high heat may destroy some of garlic’s medicinally active compounds, cooked garlic still confers health benefits, says Kaminsky. Kitchen tip: Chop a few fresh cloves and add to extra virgin olive oil, then drizzle over greens, salads and pasta dishes. In the refrigerator, this seasoned oil remains fresh for about a week.

Or use whole, cooked cloves to season meats, potatoes and rice dishes.

Try it in this Lemon-Garlic Marinated Shrimp.

Cayenne PepperSpice source: This fiery powder comes from dried, ground red chili peppers.

Reason to season: Cayenne’s active ingredient is capsaicin, the compound that gives peppers heat and pharmaceutical potential.

Cayenne powder is used to stimulate digestion and protect the heart, says Kaminsky.

“It’s also used to treat colds and congestion, and as a carminative [flatulence reducer].”

Daily dose: 1/4 teaspoon daily, says Reardon.

Kitchen tip: Try cayenne instead of black pepper with veggies, salads, soups and stews. Add a fiery zing to fruit by sprinkling a pinch (a little goes a long way) on fresh mangos, papayas, cantaloupe and coconuts. Try it in this Southwest Black Bean Soup.

For an even higher dose of capsaicin, use chopped chili peppers, such as jalapeno, in chili and other bean dishes, soups, salsas and chutneys. Try it in this Roasted Chicken Tenders with Peppers and Onions.

Cinnamon
Spice source:
This aromatic, sweet spice is made from the brown bark of the cinnamon tree.
Reason to season: A spoonful of spice may help the sugar go down. Cinnamon consumption can reduce glucose, triglyceride and LDL “bad” cholesterol levels in people with type 2 diabetes, according to a 2003 Beltsville Human Nutrition Research Center study.

If you're not diabetic, “during cold and flu season, drink hot milk with honey and cinnamon to warm you up,” Kaminsky suggests.

Daily dose: 1/2-1 teaspoon of ground cinnamon is all you need, says Reardon.

Kitchen tip: Available on store shelves as a ground powder or dried, tubular stick, cinnamon enhances the flavor of sweet potatoes, sugar-topped buttered toast, soy milk, oatmeal, baked apples and many desserts. Grating cinnamon stick into your coffee or tea adds a fragrant sweetness.

Seasoning secretsHow you store and cook spices affects their efficacy. Here are some tips:
  • Store spices and herbs in a cool, dry place (out of direct sunlight).

  • Remove seeds from peppers to turn down their heat.

  • Add ground spices near the end of cooking time, since they release their flavor immediately.

  • Whole spices should be added at the beginning of cooking so their full flavor can be extracted.

  • Crumbling whole herbs just before use releases their flavor.

  • Chop or smash garlic cloves to release allicin, the active health-promoting ingredient.

Herbs are the stems and leaves of shrubs and can be used fresh or dried.

Amazing Facts About Hemp!

Hemp and History


  • Until 1883, 75-90% of all paper in the U.S. was
    made with hemp.

  • Hemp seed was the # 1-selling bird feed; 4
    million pounds were sold in the U.S. in 1937.

  • In the mid-to-late 1800's the 2nd & 3rd most
    commonly used medications were concentrated cannabis extracts and resins
    (a.k.a. hashish).

  • A bridge in the south of France dated at
    500-700 A.D. was built with a mixture of hemp.

  • In 1941 Henry Ford built a car with a plastic
    made from hemp and wheat straw.

  • Until 1937 70-90% of all rope and twine was
    made with hemp.

  • Both George Washington and Thomas Jefferson
    grew hemp on their plantations.

  • In 1850 the U.S. Census reported 8,327 hemp
    plantation of at least 2000 acres in size. Not counted were thousands of
    smaller crops.

  • The original Levi Strauss jeans were made from
    hemp.

  • In 1942 the U.S. government strongly encouraged
    hemp cultivation to help with the war effort, going so far as to produce a
    film entitled "Hemp For Victory".

  • The version of the Declaration of Independence
    released on July 4, 1776 was written on hemp.

    Hemp and Industry

    • There are over 25,000 known uses for hemp.

    • The heating and compressing of hemp fibers can
      create building materials superior to wood in strength, quality and cost.

    • Hemp is heat, mildew, pest, light, and rot
      resistant.

    • Hemp fabric is softer, warmer, more water
      resistant and more durable than cotton. Hemp fabric also uses less chemicals
      to produce.

    • Industrial uses of hemp in China date as far
      back as 10,000 years.
  • Hemp as a Fuel Source
A bio-diesel fuel is one made from hemp oil,
vegetable oil, or other animal fat. The original idea wax developed in 1895 by
Dr. Rudolph Diesel, who developed the first engine than ran on vegetable oil. He
demonstrated the engine at the 1900 World Exhibition in Paris, France, running
the engine on peanut oil.



  • Hemp can be blended with diesel fuel in any
    ratio or used alone.

  • Biodiesel fuel is the only alternative fuel
    that can be used as-is, in any un-modified diesel engine.

  • The increased use of biodiesel fuels would
    reduce dependence on foreign sources while increasing national agricultural
    jobs and revenues.

  • The flashpoint of petroleum fuel is 125 degrees
    Fahrenheit while the flashpoint of biodiesel fuels is 300 degrees Fahrenheit.

  • Biodiesel fuels have been used successfully in
    Europe for over 20 years.

     

     Hemp as a Profitable Crop

  • Hemp is cold hardy, able to withstand even NH
    winters.

  • Hemp is pest resistant ( except from the
    2-legged kind)

  • Hemp is draught resistant

  • It is estimated that if 6% of the continental
    U.S. planted with hemp would provide for all national energy needs.

  • Hemp has a production rate of up to 10 tons per
    acre, every 4 months.

  • 1 acre of usable hemp fiber is equal to the
    usable fiber of 4 acres of trees or 2 acres of cotton.

  • Trees mature in 50-100 years; hemp matures in
    as little as 100 days.

  • The University of Missouri estimates that an
    average-size metropolitan area production of 100 million gallons of biodiesel
    fuel could generate $8.34million in personal income and 6000 temporary and
    permanent jobs. (Ref: National Biodiesel Board)

  • In 1776 a hemp shirt cost .50 cents to $1.00; a
    cotton shirt cost $100-$200

  • Hemp and the Environment

  • Biodiesel fuels emit 80% less carbon dioxide &
    nearly 100% less sulfur dioxide.

  • Hemp paper can be recycled up to seven (7)
    times; wood pulp paper can be recycled four (4) times.

  • Hemp fuels do not destroy the ozone layer or
    contribute to global warming.

  • Hemp fuels burn clean; they do not cause acid
    rain.

  • Hemp fuel is 10 times less toxic than salt, and
    as biodegradable as sugar.

     Hemp and Health

  • Hemp oil is the highest source of essential
    omega 3 and 6 fatty acids which, among other things, help control cholesterol,
    arterial blockage and the immune system.

  • Commonly-known medicinal uses of hemp include:
    nausea & vomiting; multiple sclerosis/muscle spasm disorders; spinal cord
    injuries; Chron's disease; Alzheimer's disease; Tourette's syndrome; digestive
    disorders; glaucoma; asthma; neurodegenerative disorders;

  • At one time American companies Eli Lily, Squibb
    and Park Davis produced cannabis extract medicines.

     

    Hemp and the Law

  • In 1619 Jamestown Colony, Virginia enacted laws
    ordering farmers to grow hemp. Similar laws were enacted in Massachusetts in
    1631, Connecticut in 1632 and the Chesapeake Colonies in the mid-1700's.

  • In England, foreigners were awarded with
    citizenship if they grew cannabis; those who refused were fined.

  • From 1631 until the early 1800's, hemp was used
    as legal money, with which one could buy goods and pay bills.

  • Hawaii is the first state sine the 1950's to
    legally plant a hemp crop.

     

    Hemp and the Arts


  • "Alice in Wonderland" was originally printed on
    hemp paper. It's author, Lewis Carroll, was a frequent marijuana smoker.

  • The paintings of Vincent Van Gogh and Rembrandt
    were regularly painted on hemp canvases.

  • In 1935 116 million pounds (58,000 tons) of
    hemp seed was used to make paints and varnishes.

During the years 1916-1937, William Randolph Hearst created a yellow
journalism campaign to associate hemp with marijuana.  Even though
smoking hemp, like most fibers, will just make you sick, Hearst, along with his friend Pierre DuPont, succeeded in outlawing hemp in America.  They actually robbed the world of an environmental cash crop.   Why would they do
such a thing?  Because instead of using hemp for paper, clothing, fuel,
oils, resins, medicines, and many other uses, we now use trees and synthetic petrochemicals.
Hearst owned huge forests and interests in lumber mills.  DuPont made synthetic
fuels and fibers (nylon, rayon, plastics) from petroleum.

It has beendiscovered in high concentrations in the brain of Alzheimer's patients and is suspected of contributing to or even inciting this most hideous disease.

Potatoes may seem untouched by chemicals, but because of their bad habit of sprouting, they are coated with the chemical inhibitor, maleic hydrazide, which has resulted in cancer in laboratory animals. Ice cream producers use propylene glycol, the same substance in antifreeze and paint remover. Carboxymethylcellulose is a stabilizer,used in ice cream, salad dressing, cheese spreads, and chocolate milk. It has produced tumors in 80% of rats injected. Yet the FDA flatly denies it as a carcinogen, for the reason that when it was given to the rats orally, it didn't cause cancer.

For 50 years, producers have added brominated oils to bottled fruit juice to maintain a look of freshness-even after 6 months of storage.Unfortunately, brominated oils have side effects. They produce changes in heart tissue, enlargement of the thyroid, kidney damage, decrease in liver metabolism and withered testicles. Canada, Holland,and Germany have banned brominated oils in the production of bottled drinks, yet they can still be imported from other countries.

New food additives are believed to be met with stringent testing. But due to unreliable testing methods, lack of qualified technicians, expensive analysis equipment, budget cuts and government lobbying by food conglomerates, additives that are marginally carcinogenic, mutagenic, or teratogenic stay in use.

The fetus cannot deal with foreign chemicals. Whatever toxic substances the mother eats flow largely unimpeded into the fetus. Unlike an adult, the fetus lacks protective, detoxifying systems. Teratogens are toxins which harm fetal development. Certain food additives are considered mildly teratogenic.

What toxicology testing cannot accurately predict is the long-term combined effect of 3,000 additives and environmental toxins on children, the elderly, newborn, the fetus, and people with cancer. The combined effect of these toxins on humans is unknown.

The processed food industry loads fat, sugar and salt into their products because they are cheap. They use chemicals to change these cheap, raw materials into brightly-colored, tasty products with a long shelf life.

Food producers buy the cheapest raw materials, manufacture the product as quickly as possible, then sell it for the highest price. Good business sense, but, what is lost in the manufacturing is quality.

Before cyclamate was banned, it was used to sweeten drinks such as Kool-Aid which contained 28.5% of this substance. It was discovered that 30% of humans converted as much as 40% of the cyclamates ingested into Cyclohexylamine which produces chromosome damage in animals, a high rate of still-born young, and birth defects. It was then banned. Lipton donated its artificially sweetened product to mental hospitals and prisons in Ohio, where it was accepted without question. It seems as if food companies will do just about anything to enhance the taste and textures of their products. The aim is to increase the pleasure of eating so as to maximize brand loyalty and thus profits, even if it meanscompromising nutritional value.

Dissolving Kidney Stones Quickly


Purchase four to six medium to large sized fresh lemons and consume them in a period of 14 hours by spacing them equally in that time frame. You can mix with distilled water if you wish. Drink all of the distilled water that you wish during this time frame.


You are to fast during this time. You must not eat anything period; not one peanut or red hot, nor chew a stick of gum even. This is very important if you are to succeed. Do not use concentrated lemon juice either; it won’t work.
